    Another soup recipe! The amounts in this recipe are approximate, I'm a free-spirit sort of cook and I don't really measure amounts exactly. I invented this for dinner tonight, and hubby said, "be sure you make this one again!" So I had to guesstimate and write down the ingredients!


    Cream of Chicken and Chard Soup

    8 oz. chicken, chopped in bite sized pieces
    1/4 cup onion, chopped
    1 tsp. garlic, minced
    1 tsp. red pepper flakes
    1/2 tsp. oregano
    Swiss chard stems, chopped small (from leaves, see below)
    1 bay leaf
    1 Tbsp. oil of choice
    16 oz. chicken broth
    2 cups Swiss chard, leaves cut into 1 squares (chop stems small, see above)
    4 Tbsp. heavy cream
    Salt and pepper to taste

    Brown chicken, onion, garlic, spices, and chard stems in oil about 5-7 minutes. Add chicken broth, simmer until chicken is tender. Reduce heat and stir in cream. Cook until hot but not boiling. Remove bay leaf, stir in chard leaves. Serve right away.
