    This has been a Thanksgiving tradition in my family for at least 6 years. People would riot if they didn't get their pumpkin gooey butter cakes. lol

    Here's the original recipe.

    I think the filling should be easy. I'll use honey instead of the powdered sugar. It's the crust I'm trying to figure out. I was thinking of using a combination of almond flour/coconut flour and ground nuts and coconut with butter. Does that sound like it would hold together?

    Good gracious, I love those things. I've only made one attempt at primalizing pie crust, but it went well. I used the recipe from Treats & Cheats - The Food Lovers Kitchen and I did use butter instead of palm oil shortening, because it's what I had. They make a note that it can be done with pecans also, which I think would go well with pumpkin, but I have yet to try it.

              Try my Kung Fu. It's a pain in the butt to make, but it makes really good, flakey pie crust. Dunno if that's what you might be looking for.

                when i was a raw vegan last thanksgiving, i made raw vegan pumpkin pies. The crust was pecans and walnuts and a touch of cinnamon and nutmeg that had been food processed just until crumbly and then pressed into tiny tart pans. It worked well, although needed to stay refrigerated for the crust to hold its shape.

                  bear in mind i dont eat sugar so my taste buds have changed...

                  i would do the filling by ditching the sugar and subbing the cream cheese for coconut milk or even just keeping the cream cheese.

                  it looks like the crust isnt crust but a cake? so you could either make a vanilla coconut flour cake of some kind as there will be stacks of recipes around. or you could do a frangipane thing with butter, eggs, honey and ground almonds or whatever ground nut you like, or go for the nut crust which would just be ground up nuts, maybe some ground up dates and some fat.

                    for the crust id go straight up coconut flour, a few eggs, and some sweetener if you desire. Its easy to eyeball the amount of the coconut flour to egg ratio you need.

                    for the filling instead of the cheese why not yogurt and instead of 3 eggs go with 6 egg yolks. in place of the sugar you could do some other type of flour maybe sweet rice flour pulverized superfine in a processor to get the consistency of of powdered sugar. you can do that with coconut sugar or sucanat also.

                      I'm not dairy-free, so I don't mind using cream cheese.

                      The crust of this stuff is not really like a pie crust, it's a cake mix mixed with butter and pressed into the pan. I think a combination of coconut flour, pecans, coconut and butter will provide the results I'm looking for. I will up the eggs, I think, and maybe add a bit of coconut flour to the filling, too.
