Banana almond muffins

  • Banana almond muffins

    I just made some banana almond muffins to bring to my family tomorrow, and when myself and my grandmother tried them, the were slightly spongy inside, and she said they taste like they're not done. Here's my recipe:

    6 eggs
    5 bananas
    2 tablespoon of almond butter
    1/2 tablespoon of cinnamon
    1/4 cup water

    I put them in the oven at 350 for 20 minutes, then another 10 after she said their not done. Can anyone tell me what I did wrong? Also, they rose, but not a whole lot

    um... add some almond meal or coconut flour and baking powder? What you've got there is a good pancake recipe, but dunno about an actual baked good...

      I added a tablespoon of baking powder, and used one less egg for the second batch, but they still came out slightly spongy inside while being nice on top

        i prob would have not put the water in and maybe a bit more almond butter?

            it's very similar ingredient wise to a paleo chocolate mug cake that you stick in a mug and nuke which has a whole thread on here somewhere. i googled and found the muffin version. Paleo Musings: Dark Chocolatey Goodness the Paleo Way
