In the past I have always coated sole with flour or breadcrumbs and then fried in butter. I have been eating according to PB for three weeks now and went hunting for a different way to make sole that tastes just as good . . . I morphed a few recipes and this is what I came up with . . .
1. Melt 1/4 c butter and toss in 1/4 c slivered almonds (I just chopped whole almonds in two). Brown almonds a bit.
2. Arrange 1lb of sole filets in 9.5/11 baking dish and cover with almond/butter mixture.
3. mix freshly squeezed lemon juice (about 2 tbsp) with 1/2 tsp dill, and 1/4 tsp each of salt, pepper, and paprika. Pour over sole.
4. Bake, covered, at 350 for about 20 mins. Uncover and broil on low for 3-5 mins.
Tasted fantastic. If I could have kept my family away from it I would have been tempted to eat the whole pan myself
