  • Kindergarten pot-luck ideas?

    My son's school is having an end of the year pot-luck next Friday and I need ideas on what to bring! Normally it would be no problem but:
    1 - it's outside and it will likely be hot
    2 - it's at the end of the work day (his school is in my office building) and I have limited refrigerator space
    3 - they are nut-free so no almonds or almond flour

    They are asking for volunteers for the normal categories (main dish, salads, dessert, drinks). I may just bag it and bring a fruit salad but I want something that we know we'll be able to eat!

    Any ideas?

    Seriously: chocolate Rice Krispies treats.

    Rice Krispies honestly aren't that bad - it's just puffed rice and they're certified gluten free I believe. Instead of adding sugar to the mix, just melt down dark chocolate and mix it together.

    Now, the marshmallows are the sticking point. I challenge you to find decent marshmallows - you probably won't to say the least! This could either be a compromise. I'm sure your child could handle a couple marshmallows just this once, and there's obviously nothing wrong with butter and dark chocolate.

    Another possible option: cheesecake brownies. These are VERY solid gluten-free brownies, and you can easily replace cornstarch with potato starch or tapioca starch (both are perfectly primal).

    I don't add sugar - I just melt dark chocolate chips, they're plenty sweet enough. From there, simply whip one bar of cream cheese with a whole egg and a little bit of sweetener like stevia or a couple teaspoons of coconut sugar, plop a few tablespoons on top and swirl with a knife.

    Or you could leave the cream cheese and nuts out altogether and just make plain brownies. Nothing wrong with that, especially with some cream cheese icing (cream cheese whipped with melted chocolate chips - that's it!)

      Are you slated to bring a dessert?

      If yes, I would make fruit kebabs, and include a dipping sauce (yogurt and honey maybe). Otherwise Choco's idea of rice krispie bars is good. You can absolutely make your own marshmallows without HFCS and the other crap in it if you so choose. If you have a stand mixer it is easy peasy.

      If you can bring something else, I would bring a nice veggie tray with the type of veggies that appeal to little kids. Pea pods, mini bell peppers, cucumber rounds, baby carrots, yellow pepper strips, blanched (not raw) broccoli. Maybe some jicama if it is available in your area.

        My kid is only about 75% primal right now so I was more concerned with DH and me
        The brownies sound very good! I like the veggie tray idea but I don't think I can squeeze it into the work fridge, even disassembled. Prosciutto wrapped mozzarella balls might be another idea

          I suppose you could make the pesto dip in the first recipe, but...cashews are in it. I think pesto is overrated anyway. However, caprese ANYTHING is a mouthgasm.

            I brought in a carrot, jicama, celeri, apple and purple cabbage salad dressed with honey & lemon dressing for my K's teacher appreciation pot luck. I decorated it with carrots sliced as flowers to add to the spring theme.

                homemade marshmallows

                don't know a single kid who will turn down marshmallows.

                you can take it one step further by making or buying gluten free grahams and bringing some chocolate bars for s'mores.

                    How about dicing up some pineapple, watermelon, cantaloup, along with grapes, etc? Easy and kids love it. I've done the veggie trays in the past, but you have to watch if you have any kind of dip... kiddies this age are notorious double, triple, or quad dippers.

                      I just had a party for the pre-ballet class I teach and one of the kids brought "butterflies" they made. Basically you take a snack sized zip log and they put cubed cheese on one side and grapes on the other. Take a pipe cleaner to cinch the middle and make the antennae of the butterfly. Super cute and a big hit with all the kids!

                        Duh! The butterfly bags! I've been meaning to make those for years! Maybe I'll do cheese and good pepperoni for the two sides since I think there will be tons of fruit elsewhere
