  • Pudding made with coconut milk?

    I was wondering if anyone has tried making pudding with coconut milk? I am talking about using a sugar free pudding mix and coconut milk. Do you think it would set up? I used to gobble down fat free pudding made with skim milk because it was fat free- boy was that stupid!!

    Thanks for any ideas about this.

    I've never tried a pudding mix, but right now my daughter is gobbling down her portion of coconut milk pudding. We just put a can of coconut milk, one banana, one avocado and big scoop of baking coco in the blender till smooth. Chill for a while in the fridge and thats it.

      I used 1 can of coconut milk, 1 tsp vanilla, 3 tbsp dark chocolate (or cocoa powder), 1 tbsp honey and 1/2-1 tsp agar. Just heat it all together until boiling and then pour in individual portions. The more agar you add, the more solid the pudding becomes (closer to a jello.)

      It tastes fantastic and you know all the ingredients in it!

        So I experimented and made an incredible chocolate mousse!! I can chilled coconut milk, 1/2 cup hwc, 4 big spoons of cocoa powder, and about a 1/4 bar of 81 percent cocoa dark chocolate bar, and 2 spoons of truvia. Threw it into blender and in about 2 minutes it was really thick. Wow! Great treat! Lots of calories, maybe next time I can buy the lower calorie coconut milk, becuase I have a hard time eating a small portion of this it is so good. thanks for he ideas!!!

          Hi babes! Have I gots a GOOD idear for you!!!

          1 can room temp FF coconut milk
          2T chia seeds
          2T honey (or sweetener of your choice)

          Mix chia seeds and sweetener into coconut milk. Let sit ON THE COUNTER for 10-15 minutes. Then chill. Just like coconut tapioca pudding with the added benefits of CHIA SEEDS!

          My kid adores this stuff!

            Yep, pretty much what everyone else said.
            I've done coconut milk, cocoa, a tiny bit of sweetener.
            A quick shot with the immersion blender and then pop it in the freezer.

            If you opt for the freezer instead of the fridge, don't forget about it. The stuff gets rock hard when fully frozen, much more so than ice cream or something similar.

              Inspired by this thread, I just jumped up and made pudding. Since I'm doing a Whole 30 at the moment, chocolate is out, but I'm not a big chocolate lover anyways. I blended a can of coconut milk, a ripe banana, about 8 fresh strawberries and an avocado. It's delicious, a delicate soft pink colour, already yogurt-textured even without chilling. Can't wait to try it chilled.

              And this basic idea of coconut milk, banana and avocado as the basis of a pudding makes me think of other ideas, like a pudding using cooked sweet potato and cinnamon or pumpkin pie spice in place of the banana. I can see a whole new realm of possibilities! Thanks for posting your pudding ideas!

              Anyone devised a Primal pudding version of butterscotch? My all-time fave comfort food.

                I confess to having tried coconut milk and the packaged jell-o pudding before. It doesn't turn out as well. It's super thick.

                Best coconut milk pudding you can make it haupia. Do a search on the recipe forum for low carb haupia and you'll find my recipe. 100% primal. If you use pineapple juice instead of sugar to sweeten, then it's 100% paleo.
