  • Need minestrone recipe tweakage

    I'm just getting going on primal and I usually grow my own food and have some go-to recipes that I can in huge batches. This minestrone recipe is one of them. I know there isn't a great fat/protein ratio, but if I swap out the potatoes for zucchini would that make it primal enough? I also usually make a triple batch with a whole head of cabbage for canning, and use homegrown beef broth.

    1# ground beef
    1 large onion, chopped
    2 small potatoes, peeled & cubed
    2 carrots, pared & sliced
    2 stalks celery, sliced
    1 cup shredded cabbage or kale
    1 can (28 oz.) tomatoes

    1 bay leaf
    1/4 tsp basil
    1/4 tsp thyme
    1 tsp salt
    1/4 to 1/2 tsp pepper

    Brown ground beef and add all ingredients to soup kettle, stir thoroughly.
    Add water or beef broth to cover. Bring to boil, reduce heat to simmer and
    cook for 2-3 hours on simmer. Stir occasionally. Serve sprinkled with
    grated parmesan cheese. Makes about 3-4 quarts. Freezes well.

    Potatoes are primal. No processed crap in that recipe. Leave as is imho.

      that recipe is fine as is. even if you're carb paranoid, 2 small potatoes parsed into a soup with a lb of ground beef, is actually going to be quite low carb.

        Sweet!
        I grow about 350-400# of spuds a year. Hate to see the hens & pigs get all of them

        The soup is pretty good with added zukes though.
