    I thought I'd share this, because it turned out unexpectedly super-yum :-D

    4 Chicken Thighs

    Two or three thin slices of onion, diced finely

    A whole lot of raw spinach (maybe 1/2 pound)

    Spice Mix (equal parts Cumin, Coriander, Red Chili Powder and Salt)

    about 1 tsp Ginger+Garlic Paste

    A little Ghee for frying the chicken


    Brush the skin side of the chicken thighs with the ginger+garlic paste, then sprinkle with the spice mix.

    Start frying the chicken skin-side first (it will get crunchy and brown, almost as if it was breaded---but don't let it burn!) When it's nice and brown, turn it flesh-side down to finish cooking.

    Remove chicken to a plate and keep warm. Now the magic occurs ;-)

    There will be a bunch of delicious browned bits of chicken and spices in the pan, with some Ghee and chicken fat. Saute the onions in the pan, until they start to brown, as well. Then stir-fry the spinach in the pan until it's wilted. The moisture from the spinach de-glazes the pan, and all the yummy bits coat the spinach.

    Serves 2 to 4 (I could only eat one chicken thigh cooked this way, he ate 3---but he's a big dude)

    Yum!!! That sounds awesome. How I love chicken thighs, they are definitely the best part of the chicken :P This just might have to go on the meal list for next week!

          YUUUUUUUUUMMMMMMMMMMMM!!! This one&#39;s happening this weekend! I just bought a bunch of chicken thighs today and was just planning on roasting them, but THIS takes the cake!
