  • Blue cheese vinaigrette

    This was in my paper yesterday and I thought others might enjoy it, too.

    Blue Cheese Vinaigrette
    Makes 2 cups
    Can be refrigerated for up to a month

    ½ c red wine vinegar
    2 Tbsp fresh lemon juice
    1 Tbsp Dijon mustard
    ½ tsp garlic
    2 tsp kosher salt
    1 tsp freshly ground pepper
    1 c olive oil
    ¼ c crumbled blue cheese

    Combine the vinegar, lemon juice, mustard, garlic, salt and pepper in the bowl of a stand mixer or hand-held electric mixer until the salt has dissolved. SLOWLY drizzle in the oil, mixing continuously to form an emulsified vinaigrette
    Stir in the blue cheese

        I made it for DH this weekend and he really liked it. I put it on a salad of mache, strawberries, red onion, and pecan pieces
