  • Quinoa/sweet potato/apple dessert (think its paleo?)

    I love to cook and bake! Iím new to paleo diet so Iím not sure if this is a healthy addition to my diet. Iíve noticed some threads in which people have posted how some gluten free or nut flours or arenít good for daily consumption and I want to stay lean and healthy. Figured Iíd post the recipe and get some input. Its tasty tho!!!! And easy to make!!!!

    What you need:
    ľ cup quinoa (prepare it as the directions on the box instruct) set aside.
    Ĺ lb of sweet potato pureed in a food processer
    1 small red delicious apple pureed (skin on).
    1/2 teaspoon cinnamon
    Pinch of sea salt
    1/8 teaspoon of allspice and/or nutmeg, cloves (optional)
    Ĺ cup of unsweetened almond milk or unsweetened coconut milk (I used almond)

    Cooking instructions:
    -Cook time: 25mins--Combine pureed sweet potato and apple in a medium sized pot add in cinnamon, salt, milk, and optional spices. Bring to boil and reduce heat to about medium-low or so (gauge it) and cover it partly to let some steam escape or you may have a mess.

    -If it needs more almond milk add some, but donít freak out if its kinda runny Ďcause youíre going to add the quinoa once it cooked.

    -After 25 mins check on it and see if its mushy enough for you. If it is then add quinoa and take it off the heat!
