I just made meatloaf last night. The recipe my boyfriend taught me is a southern recipe, apparently.
the southern recipe includes 1 egg, 1 cup of breadcrumbs and 1 cup of milk (i replaced with a splash of 1/2 and 1/2).
I used 1/2 c of the bread crumbs and replaced the other 1/2 c with flax meal (0 net carbs). I also drizzled a little ketchup on top, but i guess i probably don't even need to do that. the balsamic glaze sounds divine!
so some of my modifications are not super paleo, but i'm trying to woo my bf to the primal side. that requires some sneaky switches and gradual adjustments.
I totally hear you on the sneaky approach. I've been at this almost a month now and there are some things the husband and kids know have changed, some they don't know, and lots I'm waiting to tackle!
I'll be trying this! I've been looking for a primal replacement for meatloaf. I tried Mark's recipe from the blog and, while it wasn't "bad" it wasn't great either...this one sounds promising!!
