  • Dried Mushrooms as Noodles

    I bought a big ol' jug of dried mushrooms from Costo and once they've soaked up some juice, they have the consistency of noodles. They don't have a lot of mushroom flavor either. If you have a dehydrator, you might want to start slicing and drying and making some interesting meals. I've got a mushroom lasagna planned.

    could be interesting to try to slice large portobello mushroom caps sideways into slices

      Enokitake mushrooms are pretty noodle-like. They're long and thing and come in a bunch. The base pulls apart kind of like string cheese.

        I do this often for when I make chicken carbonara. I slice the portobellos, give them a quick toss in the frying pan with butter and minced garlic, plate them and serve with lovely sauce-y goodness. Mmmmm! So much yummier than pasta. I always that pasta was just a bland sauce delivery device anyways. lol
