  • Chocolate Pizza

    This is one of Joanne Fluke's recipes, and about as not primal as many dessert recipies posted here, so I thought i would share. Obviously, if you are not into non-gluten grains you can go with almond meal or rice flour-starch type mix for the crust. Or even cream-cheese-egg crepe crust. In fact, it probably doesn't need a crust at all if you can pour your chocolate -almond butter mix into a buttered pan layered with foil....

    4 cups quick oatmeal (I used Quaker Quick-1Minute)
    1 cup (2 sticks, 8 ounces, 1/2 pound) salted butter, softened
    3/4 cup brown sugar (pack it down in the cup when you measure it)

    6-ounce package semi-sweet chocolate chips (that's one cup of chips)
    3/4 cup creamy peanut butter*

    -----------------

    shredded coconut
    red candied cherries, chopped**
    chopped nuts of your choice

    * - Some people have peanut allergies. If you plan to serve this to someone who does, substitute almond butter for the peanut butter. You could also substitute Nutella (a hazelnut chocolate butter) if you can find it in your area.

    ** - If you can't find red candied cherries, you can use well-drained maraschino cherries.

    Line a cookie sheet with parchment paper.

    In a medium-sized bowl, mix the oatmeal, softened butter, and brown sugar together.

    Round the mixture up in a large ball with your impeccably clean hands and place it in the center of the parchment lined cookie sheet.

    Pat the mixture into a circle about the size of a small pizza. Push the outside edges up a bit so that they form what looks like a crust.

    Bake the "pizza" at 350 degrees F. for approximately 15 minutes, or until it turns brown and bubbles a bit.

    Take your "pizza" out of the oven and let it cool slightly while you make your toppings.

    If you have a double boiler, use it to make the topping. If you don't, use a heavy saucepan and stir it to keep the contents from scorching.

    Combine the chocolate chips and the peanut butter over LOW heat. Stir it until everything melts and blends together.

    Remove the topping from the heat and pour it over your "pizza" crust.

    Decorate the top of your pizza with the coconut to simulate shredded cheese, the chopped cherries to simulate chopped tomatoes, and the chopped nuts to simulate sausage pieces.

    Hannah's 2nd Note: Be creative with your "pizza" toppings. See if you can find something to simulate pepperoni, or green pepper, or any other real pizza topping you can think of. Remember, the toppings don't go in the oven so you can use any sweet treat you can find at the grocery store.

    Refrigerate your pizza until it has hardened. To serve, you can either cut it in slices with a pizza cutter just like a real pizza, or break it into pieces like toffee or peanut brittle.

          Did you post this as a joke? I don't spend a lot of time in the recipe section but I don't think I've ever seen anything this SAD posted before?!

              Uhm, seeing how all the ingredients are what people eat all the time on this fora & have it in all the other desert threads: chocolate, almond butter, fruit and nuts it is pretty much primal. The crust is the only non-primal thing since it has oatmeal, but either an almond crust or cream-cheese/egg crust will do just fine. I do not suggest you eat it in one sitting all by yourself, but it can make a cool cake. ???

                  Crust is the only non-primal thing? Um, I don't think so. Where's the fruit? You mean the candied cherry thingies?

                    Candied cherry --> any other dry fruit, like dried apples, bananas, kiwi, plums, strawberries, cranberries or fruit leathers; since the toppings do not go into the oven, you can easily use fresh berries and fruit as well.
                    peanut butter --> almond butter (it's right there in the recipe)
                    nuts --> primal

                    Oatmeal in crust: sub option discussed in the recipe, Mark has an Almond Crust recipe on the blog or suggestion is made to make it without crust.

                    Again, it is not a meal, it is a dessert.

                          Eating primally, deserts should feel superfluous.
                          F 5 ft 3. HW: 196 lbs. Primal SW (May 2011): 182 lbs (42% BF)... W June '12: 160 lbs (29% BF) (UK size 12, US size 8). GW: ~24% BF - have ditched the scales til I fit into a pair of UK size 10 bootcut jeans. Currently aligning towards 'The Perfect Health Diet' having swapped some fat for potatoes.
