  • Primal Grilled Bacon Jalapeno Wraps

    If you like fried cream cheese filled jalapeno poppers, you have got to try these primal bacon jalapeno wraps! They are awesome! I can't take credit for them; I found them on the All Recipes website and followed some of the suggestions from the reviewers. I think you will be amazed at how good they are!

    Bacon Jalapeno Wraps

    Ingredients:
    6 fresh jalapeno peppers, halved lengthwise and seeded with the membrane scraped off
    1 (8 ounce) package cream cheese (softened at room temp.)
    12 slices bacon

    Directions:
    Preheat oven 350 degrees.
    Start a small pot of boiling water; the hot water will cut the "heat" of the jalapenos. If you like yours hot, skip the water.
    Wear gloves, this will protect your hands from the sting of the jalapenos. If you don't have any gloves, you can place your hands in small plastic bags - awkward but effective!

    Slice jalapenos length-wise, scoop out all seeds. With a paring knife, carefully scrape out the membrane. This will cut down the "heat" of the jalapenos. Leave membrane in if you like 'em hot.

    Toss jalapenos in the boiling water for 4-6 minutes. Again, if you like 'em hot, skip this step.

    Remove jalapenos, let cool enough so you can handle them.

    With a spoon, spread cream cheese to fill each jalapeno half.
    Wrap with a slice of bacon. You can use a half slice of bacon if you prefer. Wrap the bacon around the jalapeno and tuck the end piece under if you can. If you are using a half piece, just wrap the bacon around the jalapeno. You can use a toothpick to secure it if you would like.

    Place the wrapped jalapenos into the fridge for a couple of hours or in the freezer for 15 minutes to firm up the cheese. You can even place them in the fridge overnight in an airtight container and bake them the next day.

    You’ll need a rimmed, shallow baking pan (a rimmed cookie sheet works well) and a cooling rack. Place the cooling rack on top of the cookie sheet and place your jalapenos on top. The rack will allow the grease from the bacon to drip down into the pan.

    Bake 45 minutes.

    ENJOY!!

              Actually decided to make these tonight, to take some to work tomorrow. Technically it will be cheating on my Whole30, but everyone will be stuffing their faces on pizza and beer tomorrow so I need something to make them jealous.
