    I think I've stumbled on a pretty good replacement for pizza dough.
    Oopsie Bread.
    I found the recipe in a low carb blog, yourlighterside I think. So I am certainly not claiming creation rights!!
    The bread worked well for homemade pizza on Friday night so I thought I'd share, the slightly modified recipe....

    Pre-Heat oven to 180'C (300F???)

    3 eggs, seperated
    80g philly cheese, soft
    1/4 Tspn baking soda
    1TBspn coconut flour

    Whip egg whites and baking soda until soft peaks.

    Beat philly and egg yolks until combined then add coconut flour.

    Gently fold egg whites into egg yolk mix.

    Spoon mix on to baking sheets to desired size. Bread size is best otherwise it stays too soggy.

    Bake until golden, turn oven off and leave in until cool. This helps to dry them out.

    Use for cheese on 'toast' or if using for PIZZA then I suggest putting the slice in the oven to crisp further, then add pizza sauce and toppings as desired. Not too much though as the crust isnt as robust as dough.

    The original recipe doesnt have coconut flour in it but it gives it more strength.

    You should try her chicken pizza crust - it's even better. It gets crispy and holds up to major toppings.

      Is that the one that is like 1 cup chicken & 1 cup cheese, in the food processor? We loved that!!!! We piled high the meat toppings

        Hi there! I am the blogger from Your Lighter Side and am so freakdiculously pleased you love the oopsie rolls, let alone as a pizza base. I have to say I am an even bigger fan of the chicken crust, like smarterthanthou. It pretty much rocks my socks. The cauliflower crust is pretty wonderful, too, but the chicken is my family's favorite!

          I haven't tried the chicken crust yet, but here's the original recipe (author said lots of people copied it, changed it):

          Easy Crispy Pizza Crust

          1 packed cup cooked, minced chicken breast
          1 cup packed mozzarella, shredded
          1 Tbsp parsley, dried
          1 tsp basil
          1/2 tsp onion powder
          1/2 tsp garlic powder

          1. Preheat oven to 425 degrees Fahrenheit.
          2. Process chicken and cheese together.
          Mixture will resemble a meal/thick, dense crumb consistency.
          3. Press chicken/cheese mixture on parchment paper on a
          cookie sheet.
          4. Top with parsley, basil, onion and garlic powder.
          5. Bake for 12 minutes.
          6. Let cool for five minutes.
          7. Top with sauce, cheese, and then toppings.
          8. Bake for 6-8 minutes more, or until toppings are melted.
          9. Let cool for five minutes.
          10. Slice and serve.

          Makes an entire 16″ pizza.

          Nutritional information per 1/8 of pizza,
          prepared with pepperoni and added cheese and
          no-sugar pizza sauce: Calories: 180 ,
          Carbohydrates: 1.8 g , Fiber: .2 g,
          Net Carbohydrates: 1.6 g , Protein: 17.3 g, Fat: 11 g.
          Nutritional information per 1/8 of pizza crust only:
          Calories: 96.9, Carbohydrates: .5 g , Fiber: 0 g,
          Net Carbohydrates: .5 g , Protein: 11.9 g, Fat: 5g.

                I'll bet I could swop the chicken for pork? I only ask as I have some awesome lean old spot leg which I am going to slow cook tomorrow, would love pizza on Thursday

                    The cauliflower crust is really mine. Others have taken it and tweaked it, but the original stems from 2008 on my site.

                        In the recipe it says 80g philly cheese.

                        Does that mean philadelphia cream cheese?

                            OMG the chicken crust is soooo good!! Though i use a bit less mozarella (2/3 the recommended amount) just because the size of the organic chicken mince packets at my local shop and the size of the mozarella portions aren't equal so it's easier that way. Works really really well though. Better than really pizza and you can make it ultra thin... Though I haven't had real pizza in a long time so I might be delusional. Much gratitude to you for coming up with that recipe!

                              The Chicken Crust is seriously awesome! The cauliflower pizza saw me through some tough pizza cravings but now I prefer the chicken.
