  • Mexican fix, I need my guacamole

    Hey everyone!
I was curious if anyone had a pretty good guacamole recipe! I was not sure if avocado would fit into primal. Any bit of help would help!

I mush an avocado with a splash of lime juice and a sprinkle of paprika. I've no idea if that's actually guacomole but it's tasty!

1 avocado, 1/2 tomato finely diced, juice of half a lime or lemon, sprinkle of sea salt, dash of pepper, onion powder, garlic powder.
(I have an intolerance to raw garlic & onions)

I go with 3 medium hoss avocado, 2 pearl onions, 3-4 cloves of garlic, juice of 1 lime, fresh cilantro, pink Hymalayan salt, one jalapeno, and a dash of pepper. Throw it all in the processor together and hit it (Started out doing it by hand, its the *reason* i bought a food processor.) Makes ~3 servings.

And to anyone adding tomatoes in while mixing - try it without! It makes it watery even if you deseed tomatoes. Put them gently on top when you are done with the guac, and don't mix. Just a hint from an avid guac maker/eater.

You can also add salsa instead, but again, I like mine on the side not mixed in. Guac should stick to a chip/fork/plate. Its thick, not watery.

With eggs in morning as a side. With your fork. On top of chicken & cheese. With salsa. With homemade chips (super easy! microwave very thin sliced potatoes for about 7 minutes w/only salt on them). With carne asada.

Its no longer a dip per say for you, but I like it just as well. Fresh squeezed garlic is a must.

I keep it very clean - Holy Guacamole, I call it; it's very pure!

Stick blend avocado with some lime juice and a touch of sea salt. Done.

We like long, firm cos lettuce leaves as wraps ... guac spread on, chilli con carne piled on, greek yoghurt on top. Eat, drip everywhere, grin.
