  • Ice Cream

Hi everyone, I have been trying to make ice cream using coconut milk, yolks, flavor and some sweetener. Unfortunately it freezes way to hard in my ice cream maker. I was wondering if it's because I don't use sweetener? Or do I just need a better ice cream maker?

A little alcohol will keep it from freezing so solid. Really, that's the only thing I can think of to soften it up.

I read that somewhere as well, just afraid it will taste of alcohol?

Try rennet tablets. They helped smooth mine out nicely.

"Try rennet tablets. They helped smooth mine out nicely."

How many tablets do you use per batch of ice cream?

            Thanks!

I think one or two. There were instructions in the box. They had some recipes for cottage cheese, too!

So...debating buying an "ice cream maker." Are you all talking about one that is a machine for the counter, or one that sits on the deck (per say) and uses a motor & rock salt? I have the motor/rock salt variety....does primal ice cream work in that variety does anyone know?

                  I have this one:
Amazon.com: Cuisinart ICE-30BC Pure Indulgence 2-Quart Automatic Frozen Yogurt, Sorbet, and Ice Cream Maker: Kitchen & Dining

we don't use it often though. We still buy ice cream from the store.
                  Scratch that.
                  We buy gelato.

I always recommend Talenti Gelato, Haagen Dasz 5, and Breyers original for primal ice cream enjoying

ice cream is just about the healthiest paleo 'cheat' out there, particularly if you don't go overboard on the sugar. better yet, use rice syrup - no fructose!! i'll make it with heavy cream, egg yolks and rice syrup and i consider it muthaf*ckin health food.

sorry for swearing, this is passion.

better yet, use coconut nectar instead of rice syrup. Then it's 100% primal, and potentially 100% raw (esp if you use raw milk)

Not but seriously, ice cream is the best thing ever.

dr. bork bork (is that a great name? yes, yes it is), here's where i don't want to get trapped into primal dogma. so coconuts are the saving grace of all things primal, and white rice is a dirty dirty grain. okay. but... if you use the rice syrup, you get pure glucose, where as the coconut nectar has a good hit of fructose too. i will always opt for glucose over fructose.

to be honest though, both are great and would work!

                            This is my favorite:
5-6 bananas, sliced and frozen 1-2 hours
                            Coconut milk to desired consistancy
Unsweetened cocoa powder, almond butter, fresh ginger, any flavors of your liking

Simply put it all in the blender and EAT THE HELL OUTTA THAT SH*T.

No fancy unitasking machines, no sweeteners, no hassles. Just smooth, healthy, indulgent nondairy ice cream!

Yeah, if only I could do milk! At least I can do fermented dairy to some degree these days, which is a blessing, and I enjoy that sooo much. So I was hoping to do the coconut milk or some almond milk or something ice cream or even frozen yoghurt perhaps....
