    This was requested on yesterday's topic comments so here goes:


    Banana Coconut Milk Custard


    1 really ripe banana

    1 can coconut milk

    5 eggs

    2 T. Honey

    1/2 t. vanilla

    dash of cinnamon


    Pre-heat oven to 325 degrees. Blend all the above ingredients together in a blender and pour into individual ramekins or one 9x9 glass baking dish. Place dish(es) of your choice into a larger baking pan with sides at least 2-3 inches high. Pour hot water into large pan until about halfway up the sides of the ramekins/baking dish. Bake for about 40 minutes for indivial ramekins or and hour for the larger dish. Remove when golden on top but still slightly wiggly. Refrigerate. Enjoy.

        This is very similar to a milkshake I have lined up for my blog! I'd be making it today if I weren't snowed in without a banana. *sigh*


        I really like your recipe. I can't wait to try it out. Will have to get more honey also.

              The beauty of the custards, aside from Diana trying to use up her eggs, is that you can pack a lot of eggy goodness in them, use almost anything you like for flavor or sweetness, and they turn out yummy.


              MichaelA - I think a date would be a delicious way to sweeten a custard.

                          Omg I made a big dish of it last night, My fiance ate half of it right after I made it and ate the whole other half for breakfast! Its delicious! He goes, "If this is eating Primal, Im all over it!!" haha

                              I had all these ingredients on hand (lucky me!) and have the custard in the oven baking right now. I had a little taste of what was in the blender, so I KNOW it's going to be good!
