    small amounts of dairy acceptable but no corn starch, flours, etc please ...

      I think what you are looking for is a coconut custard, try searching for it that way, and you will likely find a recipe that works for you. Something like this:

        Or you could go with a coconut crust- like so (I'd cut the sugar or substitute) Sweet Twist of Blogging: Coconut Chocolate Pie

                thanks .. and no, no coconut flour .. i dont do any forms of fake flour etc especially with how fast it begins to deteriorate ..

                  ill have to figure out the best substitute for that sugar .. maybe raw honey.. wouldnt need as much of that i wouldnt think

                    OMG you guys, I just made the chocolate coconut pie! it was so easy, and SOOOOOOOO GOOD!!!!!!!!! The only thing was, I didn't put any sugar in the crust. Next time I will try adding a little honey to the crust. But its really good even without the sugar! You'll think you died and went to heaven

                        Not all flours are "fake". It's the fat that deteriorates in flour, which is why wheat flour and oats go rancid. Technically, coconut flour would have a shorter shelf life than something like potato starch or white rice flour, which is basically fat free. Nut meals are the worst offenders of all.

                        You could always just throw white rice in a coffee grinder. That's how white rice flour is made. If you're against buying flour, grinding white rice yourself at your leisure is absolutely your best option. Another possibility is to slice potatoes very thinly and put them into a food dehydrator into "chips" and then grind that into potato starch.

                          the pie is GREAT .. i made it with 1/2 the chocolate and cream mixture .. and added sliced almonds on top of half for the wife .. its like an almond joy / mounds bar .. i also made it in a rectangular pan and used a little raw honey (perhaps a tblsp?) instead of sugar .. for the chocolate mixture i used a 3.5oz green and blacks 85% bar (there is none better imho), and 1/2 cup whole cream

                              Choco, I found this recipe for making potato starch, it looks different from what you are suggesting (basically dehydrated potatoes):

                              for the rice flour this site suggests washing, soaking and dry-roasting rice first before grinding.

                              Both potato starch and rice flour are super expensive here, so I am actually tempted to try to grind my own, seeing both rice and potatoes are very cheap.
