    Oven roasted OKRA! (Better than french fries)
    following my nose...: Roasted Okra - Better than French Fries

    Instructions:
    Spread the pods on a pan. Drizzle with your oil of choice. I used olive oil this time...next time I'll try coconut oil. Sprinkle with salt, and any other seasonings you like. Maybe cumin, cayenne, lemon pepper? I kept it simple with just some kosher salt. About 12-15 minutes at 400 degrees should get them crunchy, but it is easy to over do them, so check often. A quick clarification about preheating...most of the time, I don't. My oven is gas, and heats up pretty quick, plus I want the oven on for the shortest time possible, especially in the summer. But most people preheat, so if you chose to do so, your cooking time will probably be more like 10 minutes.

    I'll be adding a few extra plants this year even though my husband won't touch the stuff with a ten foot pole.

    Yeah, I LOVE, and have always LOVED, fried okra... I thought I was now accepting a life of just the soft slimy stuff (which is good too IMO), but having crispy okra back in my life = *swoon*

        Mmmm ... roasted veg taste pleasantly and subtley sweet. Those okra look to have the crunch factor too.

        The pic reminds me of pjgh's wonderful food porn photos.
        F 5 ft 3. HW: 196 lbs. Primal SW (May 2011): 182 lbs (42% BF)... W June '12: 160 lbs (29% BF) (UK size 12, US size 8). GW: ~24% BF - have ditched the scales til I fit into a pair of UK size 10 bootcut jeans. Currently aligning towards 'The Perfect Health Diet' having swapped some fat for potatoes.

          I made these tonight!
          Tossed the okra in some melted bacon grease and butter... added some salt free garlic and herb seasoning... SOOOO goood!
          I ate a PILE of them with a whole roasted yellowtail snapper.

              I read this yesterday and now there's a sticky note on my desk that says "OKRA --> FRIES". I love okra but I've mostly only had it cooked on the stove, so that it looks like it's swimming in spit. I've had really good stewed okra from Indian restaurants too.
