  • Chewy Coconut Macaroons

    I have been searching for a good chewy coconut macaroon. I have tried a lot of primal friendly recipes. I finally made my own and I am really happy about how they turned out -

    1/2 cup coconut palm sugar
    1/4 or so cup warm water
    1 TBS vanilla
    3 cups finely shredded coconut
    3 egg whites
    1/4 tsp sea salt
    dash of cream of tartar (optional)

    Mix the coconut palm sugar, water and vanilla in a bowl. Stir a bit and let sit so the granules mostly dissolve. You can add a bit more water if you wish. Add the coconut and mix well. Let sit for about 20 minutes or more.

    In a separate bowl beat the egg whites and salt until foamy and white, add cream of tartar. Whip to soft peaks. Fold coconut mixture into egg whites. Drop by tablespoons onto parchment paper lined cookie sheets. Bake at 350 degrees for 15 minutes until nicely browned.

    I think these would be awesome to keep in the freezer and indulge in on a rare occasion. I have to limit my carbs, but these sound really good - so I may whip up a freezer supply

      I did not run them through a program to find out how many carbs but you could definitely cut some of the coconut palm sugar (which is low glycemic). I would add a bit more water if you do. I was also going to try with some coconut milk replacing some of the water. It makes quite a bit and even one is very satisfying.

        I'm going to omit all of the palm sugar and replace it with that sugar substitute from plants - like xylitol, but doesn't give you the runs. Can't remember what it's called.

          Erythritol. I would also use a little stevia as well. These sound delicious!

                  Erythritol is usually bound with stevia unless you are using stevia in a pure liquid form. It's also very good at causing gas and bloating and the runs if you eat a good serving of it.

                    Coconut macaroons are my favorite cookie in the whole entire world! Imagine my pure bliss when I discovered coconut in all forms is highly approved. I will be printing and trying this recipe. Thank you so much!!

                      So, if they don't hold together well, should I add another egg white or something else? Just to try something out, I added some cocoa powder to the last few and those ones actually stuck together well through baking. The plain ones are going to all fall apart when I take them off the pan so they'll probably be re-purposed for grain free granola-ish stuff.

                        Yes, my next batch will be with 4 egg whites as test. Why is everyone against coconut palm sugar? It is one of the least processed sweetners available. I also cut the sugar to 1/3 cup with a bit more water and really liked the results.
