  • Why should the outer membrane of liver be removed?

Is there are reason why the outer membrane of liver should be removed? I read a few articles about prepping liver saying to remove the outer membrane, but no one says why. Is it for the taste and texture or is it about toxins? Thanks.

... for flavour and texture. You don't want membrane stuck between your teeth while enjoying this delicious organ!

OK thanks. I read that in Inuit folklore, they would remove the outer membrane of polar bear liver and somehow be protected from toxicity, but that myth was busted and thats why I ask.

Probably folklore - Polar Bear liver is so rich in vitamin A it is practically toxic to humans in any amount. The Inuit may have found that people got sick eating the liver and membrane more readily than they did eating only the liver?
