Most SAD recipes I've learned throughout my life serve scallops over pasta or rice. When I Google paleo recipes for scallops it's usually just how to cook them in lemon butter or wrapped in bacon but not usually a mention of vegetables. I find it easier to eat more vegetables if they are part of a main dish and not just a side dish. So I'm trying to find interesting ways to combine meat/seafood and vegetables into a main dish. Specifically trying to find more ways to eat scallops and shrimp with vegetables together. Any ideas?
