  • Happy pancake day!

I tried this recipe http://lowcarbdiets.about.com/od/bre...rbpancakes.htm albeit watered down with extra sparkling water.

It was a little cakey, but tasty (and I didn't use any sweetener bar a pinch of sugar).

Any recommendations for a thinner "crepe" type rather than a thicker American type?

Thank you for this! I was wondering what I was going to have for dinner tonight if not pancakes and fried eggs.

It doesn't behave like "normal" batter - my first attempt turned to smush.... the second I let sit in the pan for longer before prodding it.

I don't think I used enough oil perhaps?

      Bon appetit!

I found a couple more recipes at Castle Grok:

My waffle recipe works perfectly for pancakes too:

I've used it lots of times to make waffles and to make pancakes... when you make pancakes with it, just pour it slowly into circles in the pan (if you do it quickly they will be very thin)... they take longer than wheaty pancakes to cook, but it's pretty intuitive when to flip these if you've ever made pancakes before. heh.

Eating lots but still hungry? Eat more fat. Mid-day sluggishness? Eat more fat. Feeling depressed or irritable? Eat more fat. People think you've developed an eating disorder? Eat more fat... in front of them.
