    First, thank you to Diane Renata for mentioning this - maybe she got the idea from somewhere else, maybe she came up with it herself, but I heard it from her first.

    Pork rinds as "breadcrumbs" ... anyone else thinking Schnitzel?





    ... as a whole meal:



    Yes, there's some "mushy peas" there, but so boiled down there's nothing more than taste. Yes, there's some chips/fries (whatever your language calls them) for good simple carb fried off in dripping. The peas were simply because I had a can left over from pre-paleo times (yes, that long ago) and felt like using them up in a damn tasty meal.

    Fried egg makes everything good.

    So, these pork rinds? Yes, just blitz them with a stick blender ... or food processor if you're all posh, but us plebs use a stick blender. Bash your meat! Oh! Did I say that? No, bash your meat ... flat ... dip in egg, pat into the crumbs and chuck into a frying pan. Couple of minutes, flip, couple of minutes, done ... be quick with everything else.

    Taste? Damn good!

          Hmmm ... this has got me thinking ...

          I had a damn good slice of home made cheesecake after this, which is pretty much just set mascarpone with some lemon juice. Who thinks porn rind (I mean pork rind) breadcrumbs would work for a cheesecake?

                I must confess, this was done with bought pork rinds. Shock! Horror! I know ... but preparation is the key, and if someone else can do the prep to test out an idea, great. I used a bag of pork rinds from my local farm shop. The ingredients listed as pork skin, salt and spices. I guess the spices were a little chilli and paprika, no "yeast extract" and from what I know pretty damn good.

                Anyway, that aside ... real pork rinds taken off a slice of belly, re-grilled and crispened up then left to dry should have just the right amount of saltiness. A little salt is a good thing with something like a cheesecake, so long as the balance is right. Yes, cinnamon and maybe some mace or nutmeg might well do it. I don't want to waste good mascarpone on overly salted rinds, but maybe at the weekend, some belly might get cooked and some extra rind cooled.

                        It certainly does ... I feel like it was a wasted opportunity not spicing it now.

                        Turkey, next. Turkey will accept cinnamon and cayenne pepper, coriander, too, so a sort of warming spice set. Good glob of Greek-style yoghurt and a ratatouille alongside?

                          Re-reading this, I've rather got it in my head now to try out some sort of savoury cheesecake ...
