  • Need Help with Broccoli Salad Dressing

    Hi peeps:

    I'm trying to recreate a broccoli salad that I've been buying at the local market. However, I'm not sure how to do the dressing part.

    The salad itself is broccoli, mandarin orange, chopped red onion, cashews and bacon bits.

    I'm guessing the dressing is made with mayonnaise, vinegar and sugar; but I'm not sure.

    I tried making some home-made mayonnaise and mixed that with some apple cider vinegar, and stevia. But in order to get it liquidy enough I had to add so much vinegar that the dressing tasted too vinegary. I tried adding a little water too in order to make the dressing less thick.

    So anyway, I was wondering if anyone had any ideas on how to make a dressing for broccoli salad???

    this:

    1 cup mayonnaise
    2 tablespoons vinegar
    1/2 cup sugar, or to taste

    is the usual dressing recipe for broccoli salads, just add however much stevia tastes good to you then mix it all together and chill the salad in the fridge

        Also, does it matter what kind of vinegar I use? I tried using apple cider vinegar, but I also have some white wine vinegar, white distilled vinegar, balsamic vinegar and some coconut vinegar.

          Would lemon or ginger work? Whenever I use ginger, it seems to act as a sweetener.

            you can use any vinegar you like, they'll all add the vinegary tang but have subtle taste differences. depends on what you like

                I make broccoli salad dressing with plain yoghurt, lemon juice, and a pinch of sea salt. I don't really measure, so you'd have to play around with it - if I had to guess, about a cup of yoghurt, 2 tbsp or so of lemon juice.

                I sometimes also throw in some crumbled feta with a bit of the whey, instead of the salt.

                    I found out the other day that they do add some water to the dressing as well. I suspected so because their dressing wasn't as thick as mine.

                    I could eat this salad every day.
