Thanks for posting - looks like a great recipe and I like the idea of serving it with sweet potatoes. I was wondering whether coconut flour can be used as a batter for fried food and I guess you just answered that question
One quick question: Why do you write that Bob's Red Mill coconut flour is notoriously mediocre? It's the only one I have ever been able to find and tastes OK to me, so now I'm wondering whether I'm missing something.
