    Look, Ma. I used my Jedi powers for good instead of sugary cookie evil today!

    Beef Wellington.

    Bravo! At first glance, I wondered what you'd use rather than a crepe - using proscuitto was inspired.

    You know, many of these kind of dishes, the purpose of the pastry is simply to protect the meat from fierce heat. Originally, the pastry would simply be broken away from the meat and not eaten. The same for traditional British battered and deep fried fish - the batter would be cracked and delicated steaming fish released; the batter discarded.

    That is a useful principle for primal.

    Now that the pastry is an integral part of the dish, making up a primal friendly pastry to bring these dishes to the primal table is such fun. Looks great! Bet it tasted fantastic!

      Makes a good breakfast! Removed the dough and just ate the steak, duxelle, and prosciutto.
      The prosciutto was inserted to prevent the crust from getting soggy.

      P.S. I altered the Kung Fu recipe and removed the Xanthan Gum.
