  • Blackened chicken in coconut oil

    Decided to make a big pot of vegetable soup last night for dinner. At first, I was going to add some chicken or beef to it. On a whim I decided to cook the chicken in a frying pan with some coconut oil.

    I heated up about 2 TB of oil with about 4 TB of blackening seasoning. Fried the boneless organic thighs from Trader Joe's in it.

    There were no left-overs. Of course, my 14 year old son was the cause of that. Little pit ate 4 thighs!

    Now I just need to work on my soup. Little bland.
