  • Everything Omelette

Hi all. I'm new here - just starting the primal thing and happen to like omelettes. Thought I'd share a recipe which is quick and tasty.
It's is simple as anything. Works nicely for breakfast, lunch or dinner.

Just a few eggs (2 for a small omelette, more for a bigger one) and anything else you have handy.

My favourite is a handful of broccoli and cauliflower, a few mushrooms, a tomato or a few baby plum tomatoes, a little bacon, all chopped into small pieces, and a sprinkle of grated cheese.

Just fry the veggies, mushrooms and bacon (in the bacon's own fat) for a few minutes. Add the eggs and sprinkle the cheese on top. let it cook for a few minutes (til it's still a bit runny on the top) then put the frying pan under the grill for another minute or two to cook it the rest of the way through and make the cheese just a little bubbly.

    Voilą!

    one tasty omelette :-)

(It also works well with a bit of chopped avocado or sliced sausages, onion or pretty much anything else "primal" that you have lying around)

Pretty darn yummy! Eggs are incredible; delicious on their own, but also neutral enough that they go well with darn near everything else.
