Is this for what I might call Cauliflower Cheese in the UK? Steamed/boiled cauliflower with a milk and cheese sauce poured over?
I find arrowroot makes milky sauces look slimy. I don't like it.
I use double the amount of cheese and reduce the milk slightly. Pour over the cauli and then sprinkle some fresh cheese and sea salt over the top for a little crunch. Put under the grill/broiler for a couple of minutes to melt the cheese and bring a little colour.
