  • I want cookies!

    So really, I'd love to have some cookies for my 20%. Cookies are fucking awesome. But they are fucking awesome because they are so crunchy and stuff. I mean I can make a frigging healthy cake from coconut milk, coconut flour, eggs, vanilla and cinnamon. It tastes good. But I want a fucking crunchy cookie. Now I can just walk to the store, buy it and eat 'cause fuck yeah 20%.

    But no, I want to be smart about this. I want to still avoid vegetable oil, refined sugar, nuts and gluten. Fuck the fact that it's high carb with no micro nutrition, it's my 20%. Anyone has a recipe for the perfect cookie? I have no intollerances, so eggs, dairy, etc. are all fine. This is the stuff I can get my hands on 100% sure and am comfortable enough with to use:

    Flour:
    White rice flour
    Coconut flour
    Corn flour
    Tapocia flour

    Fat:
    Coconut Oil
    Grassfed butter

    Sweeteners:
    Honey
    Maple Syrup
    Cane sugar
    Liquid Stevia

    EDIT: Oh yeah, also. I'm going to try and make them in different types. Like chocolade, cinnamon & vanilla, "speculaas", chocolate chip, etc. So I'm just looking for the base recipe for a fucking good crunchy cookie which I can experiment with .

    Okay, first of all... easy with the f-bomb, dude. I appreciate your enthusiasm (really!), but the f-ness is unnecessary.
    On that note, I am more of a chewy cookie girl myself, and have a pumpkin chocolate chip recipe on my food blog (link below). I will also have a shortbread cooking recipe being posted by week's end.

        I geuss there is too much swearing in there when I reread it. Didn't notice when writing really, sorry!

        Thnx for the recipes NurseMama5, but they have almond meal in it and I'd like some with no nuts .

              MvEssen - I remember a little cookie called a "pepernotje". It was kind of what we would call gingerbread, but spicier. I would love it if you could figure out a way to make these things in primal fashion. Maybe Sinterklaus can find him a little Zwarte-GROK this year and get rid of Piet.

              For you that don't know, in Holland Santa Claus has a helper named Black Pete, a little black guy who kidnaps bad kids and leaves cookies for good kids (in the wooden shoes, of course!)

                  Hmmm, no wonder they were so good...good luck primalizing this! Funny, I don't remember them being super sweet, and I would have thought they had molasses in them. The notable flavor was a very strong ginger bite and they were kind of chewy, but not doughy. That would be cool if you could figure something out, though. Thanks Bork!

                      If you add potato flour/starch to your list, the internet has a mix of rice flour, potato flour and tapioca starch that can be substituted for the wheat flour. Then you can give a try to molasses or honey/maple syrop based crisp cookies, aka gingerbread, sugar rolled cookies, etc.

                        I geuss potato flour shouldn't be a problem and I can get potato starch about anywhere around here for sure! I'll check it out tomorrow!

                        And Otzi, pepernoten are awesome, it's pretty much just 'normal' crisp cookies with "speculaas" spices. Basically thats one of the flavours I'll try to make from this base recipe, yes . It's not that hard around here since they just sell these spices in a mix. I've made my own pepernoten last year which are awesome and it's easy to do when I have a base for a primalish cookie recipe. I'm not sure what is in the spice mix for speculaas exactly but that should be easy enough to find out.
