  • BEHOLD CINNAMON BUNS!!! - warning carb refeed only sry folks

    well after doing a grueling workout tonight via UD2 and the many inspirations of choco's porn thread, i went ahead and made this dessert for my refeed. Hardly any fat, high carbs moderate protein. Here we go!

    Cinnamon Rolls


    Ingredients:
    2 tbs of non fat cream cheese
    1/2 cup TJ's 1% Kefir
    1 tbs yeast
    1/2 tsp organic brown sugar(i know but yeast needs the sugar to proof, plus its hardly any at all)
    2 egg whites
    1/4 cup applesauce(unsweetened)
    1 cup of white rice flour
    1/2 cup tapioca flour
    2 1/2 tsp Xanthan Gum
    1/4 tsp baking soda
    2 tsp baking powder
    1 tsp vanilla extract
    2 tbs of stevia(dif brands are stronger than others, i actually used sweetleafs drops that had vanilla cream. used about 15 drops.)
    1/4 cup warm water.

    Filling:
    2 tbs of stevia powder
    2 tbs of ground cinnamon or more if u want.

    Glaze:
    1/2 cup of 0% fage greek yogurt
    vanilla extract, (i just used the stevia drops about 15-20)
    1 scoop of vanilla whey for the texture and flavor this is optional but y not for the extra protein, its for refeed anyway.

    Instructions:
    Get water to 110-115 temp if u have thermo. Combine warm water, yeast and sugar, dissolve yeast well, i let it sit to proof for about 5min til double in size.
    Preheat oven to 375.
    In one bowl combine all dry ingredients for dough. mix well.
    In another bowl combine all wet ingredients cept yeast til after the 15min from proofing. mix well.
    Mix together to form a dough. mix well to have no lumps, i just used a whisk then a silicon spatula. One thing that was a lil puzzling was that it was a lot softer than i imagined it would be nonetheless its works.
    Now lay plastic wrap on a counter enough to make a square of 13"x13", lay dough on wrap. use another piece of wrap to lay on top of the dough. I tried using parchment paper it just got stuck to it.
    Using a roller, roll dough into a square roughly 12x12.
    Remove top wrap layer and combine filling mixture and throw it on top of dough, dont be shy on the filling this is what makes the cinnamon bun awesome. Once u have the filling laid out.
    Begin to roll the dough into a cylinder shape, like a burrito if u will. using the bottom wrap as an aid to push it into the shape, peeling it off as ur rolling it.
    Heres what i did to help with cutting, i made this before i did my workout so i threw it in the freezer wrapped for a few hours, so it can harden for easier cutting. trim the edges off. It made 7 nice pieces. place pieces onto baking pan, i used non stick extra virgin olive oil spray to grease it.
    Now bake for 25mn or so til golden brown depending how u like it. let it cool a few min.
    Combine glaze ingredients together, i used a few drops of water to get a lil smoother consistency. since yogurt is quite thick.
    Top the buns with glaze and there u go. Sry for the long post but its worth it, was awesome as hell.

    Heres the full breakdown.

    each one serving is roughly, depending how thick u put the glaze on. plus its more like 6g of total fat but fitday rounds up

    173 calories
    1g fat
    32g carbs
    3g fiber
    8g pro

    im not gonna lie i ate all of it, i dont care shit! lol

            Cinnamon buns? GAHHH HOW HAVE I NEVER THOUGHT OF THIS? BRILLIANT! I'm going to rip you off for a change! I don't think I'll be able to bring myself to buy fat free cream cheese because there must be 20+ ingredients in a block, but it's nothing more yogurt can't cure.

                      This recipe is gluten free, not primal. Rice is a grain. Go for coconut, almond, or any other nut flour and honey instead of brown sugar. Also, I'd advocate full fat dairy products if you're going to use cream cheese.

                        These are for refeeds. No fat or you'll gain lots of fat and get bloated. You want all complex carbohydrate with some protein.

                        I can't get lean eating fat anyway. That's for maintenance.

                          Doesn't matter. White rice is fine. It doesn't fit in with other grains at all. Mark advocates wild rice, and white rice is even better. Far better IMO. The only thing non-Primal in this recipe is the fat free cream cheese because it has a lot of thickeners, though they're all <2% total volume.



                          Rice is far lower in toxin than both coconut and ESPECIALLY almonds. Almond flour is pure poison and is arguably worse for your health than all-purpose white wheat flour. Fat free dairy products are what you must use for a carbohydrate refeed. For best gains post-workout, DO NOT eat fat. You should stay under 50g of fat for the whole day, and the closer to 0g you get the better. I can watch myself bloat and retain water as I go over the 30g of fat mark. If I can get in the 20g of fat range, I have really good results.

                          Phytate Content (% Dry Weight)
                          Almonds 1.35% - 3.22%
                          Coconut Meal 1.17%
                          Milled (White) Rice 0.2%

                          We won't even get into lectin content, which nuts are loaded with and white rice is practically free of. White rice flour, please! If you bake, white rice flour, tapioca flour and potato starch are healthiest for you as they are lower in toxicity. I'll use coconut flour every now and again, but the myth of nut meals around here is crazy to me. They're absolutely horrendous for you unless you like an oxidized omega 6 caloric bomb full of free radicals, lectins and phytic acid.

                            You don't need to proof yeast anymore today, even dry active yeast. You don't need to add any sugar, either. There are enough sugars in the white rice flour for the yeast to do its job without any sweetener. I stopped proofing yeast a long time ago. It speeds up the process a little bit, but I find it unnecessary. I make a lot of sourdoughs, though, but keep in mind a proper sourdough has no sugar at all in the starter.

                              oh nice to know ty. also about the cream cheese, ur completely right it doesnt need it. when i looked around the net for recipes it kept asking for butter so i assumed the cream cheese would be a good sub. but the kefir is plenty enough.

                              @everyone else, like i said on the title, this recipe is for refeeds, even tho i ate all of it, it still can fall into ur 20% if u see the stats for each piece its actually not bad, and u can modify it how u like. there are worse things u can eat.
