  • Will this work? Breakfast muffin with hashbrowns?

    I am trying to come up with a fairly high carb, high protein breakfast for DH to eat on the go. I have looked at the egg muffin ideas, and they look good, but too low in carbs for what he needs. I was thinking maybe I could make hashbrowns (potatoes fried in bacon grease), add onions and maybe bell peppers and saute, put all that into muffin tins with eggs (maybe a little sour cream too) and possibly a bit of bacon, and bake it all together.

    What do you think fellow primal chefs, will this turn out ok? I think sending a couple of these, plus a banana, would be a perfect post-workout (boot camp style 2 hour training) breakfast for him, right?

    Sounds delicious! I'm not sure how the sour cream would hold up for baking, but he could always put it on the side.

    Nut butters are also quite carby and calorie dense. You can make actual brownie/muffin things with pureed squash/pumpkin (or maybe banana) and nut butter, eggs, etc. Throw in some protein powder to up the protein. Could be quite the nutrition bomb.

        You could do egg cupcakes with a sweet potato hash. That would get the job done

          I've seen lots a hashbrown/egg bake recipes such as this one: Hash Brown Egg Bake Recipe - Allrecipes.com

          I can't think of a reason you couldn't follow this, but partition them in muffin pans. Or just bake it whole and cut it. If possible, homemade hashbrowns would probably be better - the frozen ones I have seen always have really crappy ingredients.

          ETA - I would use cream instead of milk in this recipe too.

            This is PERFECT, thank you!! I will make it tomorrow, hopefully he will love it and I can just make a big batch of this, a big batch of nut butter/pumpkin and nut butter/banana muffins, freeze some for later, and have breakfast set for a while!

              Great! I hope he likes it - I used to make a recipe similar to this and everyone loved it

              I guess now that I am egg, diary, and nightshade free I'd just have to eat the bacon!
