    Made some coconut whipped cream with the stuff on top and now have about 2.5 ounces of the runny stuff from the bottom.

    is this still considered coconut milk? Does it have the same nutritional profile as on the label? it is opaque and has the consistency of syrupy water.

    The fat and the water will separate in the can. You used the fat and now you have the water left.... so it won't be what is on the label.

    Next time just shake the can really good before you open it.

    I bet the whipped cream was amazing!

      Since you were making the whipped creme recipe it's a good thing that you let it seperate, otherwise it wouldn't have whipped very well. I like to use the lefover 'water' in smoothies or just drink it. It's still nutritious.
