  • Muffin fail

    Hi there-

    I'm trying to adapt my favorite muffin recipes using coconut flour, and it's not working. Does anyone have a good recipe that's primal friendly? Or an exchange rate for coconut to regular flour? Also, which flour works better for this: coconut or almond? Fall/winter is when I get my bake on, so I need some help! Thanks!

    I find that a mix of coconut & almond flour make a better baked good than coconut alone. Try using more moisture in your coconut flour if almond is not available to you.

                      Almond*Muffins | Purely Primal

                      “Primal Muffins”

                      What you need:

                      2cups almond flour
                      2 tsp baking soda
                      1 tsp salt
                      1TBL cinnamon
                      1 cup dates / sulphur free, 3 organic bananas, 3 free range eggs
                      1 TBL apple cider vinegar/ with Mother, cup coconut oil
                      1 cups shredded organic carrots and cup walnuts
                      Directions: combine flour, salt, baking soda, cinnamon

                      In food processor: add dates, banana, eggs, vinegar, coconut oil….blend it up!

                      Blend dry ingredients into wet ingredients.

                      Fold in carrots and nuts spoon into muffin cups

                      Bake at 350 degrees for 25min

                      ENJOY!

                          114 calories
                          7.3g fat
                          8.3g carbs (4.5g fiber)
                          4g protein

                          That's why I ate four of them along with chocolate covered cottage cheese as dessert. It still clocks in at under 600 calories, which is barely a slice of cake...except packing 40g of protein.

                            If I'm out of almond flour I use an extra banana. Works fine, if you like banana taste.
                            The kids love the pumpkin coconut flour muffins for an after school snack.

                            1/2 cup coconut flour
                            1/4 cup almond meal (or 1 mashed banana)
                            1/2 teaspoon baking powder, gluten free
                            1 teaspoon cinnamon powder
                            1/4 teaspoon cloves
                            1/4 teaspoon allspice/nutmeg
                            1/2 cup pumpkin puree (not from a can)
                            6 eggs
                            1 teaspoon vanilla, gluten free
                            1/2 cup coconut oil, melted
                            3/8 cup mashed coconut meal
                            pinch sea salt

                            400F for 17 mins (my oven, may vary with yours). Makes 12 jumbo muffins.
                            Start Weight: 265.8
                            Current Weight: 234.4

                              These are mostly egg and coconut flour (no almond meal required) and they came out great!
