Looks like this lady does several recipes with chia seeds (brownies).

My favorite way to eat chia seeds are in this primal pudding (fast and yum!).

How can you take Chia Seeds?
Chia's hydrophillic structure holds water, so when mixed with sauces, drinks, yogurt, salad, dressings, cream cheese, jellies and preserves, salsa, hot/cold cereal, dips, puddings, soups, etc. It displaces calories and fat without diluting flavor. In addition to extending foods by 50% - 75% calories and fat have been reduced without compromising flavor, with an ingredient that is 90% water. Chia gel is also a great fat replacer for baked goods and special qualities for sugar control and weight loss. One pound of chia seeds would make 24 cups of gel once hydrated which if you took the recommended dose of three tablespoons three times a day of the gel it would last you over a month. I recommend to my customers to just use 1/3 cups of seeds and put in two cups of water and whisk to hydrate then place in fridge. It will last three weeks. Take out as needed and then when that is gone then hydrate more seeds. Once a day you can take One tablespoon of the raw seeds and put them in water or juice prior to workout or physical activity or for appetite control and weight loss.

I made muffins out of chia meal, eggs, and water the other day. Not bad at all.

Never used it for cooking but synergy kambucha has a few chia seed infused drinks which are pretty tasty.

              Ch Ch Ch CHIAAAAAAAAAAAAA!!!

How I adore this little seed. Whole, gelled, powdered... ahhh how I adore this little seed!

              MAKING CHIA GEL

The best ratio for making chia gel is a 1:9 chia seed/water.

In a covered bowl, add 1/3 cup chia seeds. To this, add 3 cups HOT water. Whisk (or cover and shake) well. Let it sit on the counter for 15 minutes then whisk (or shake) well again. Store, covered, in the fridge. I use an old 32 ounce Dannon yogurt container.

The chia gel has pretty much no flavor but has a mouth feel of tapioca pudding. You can use it as a substitute for eggs, oil, butter, apple sauce, anything that would usually add moisture to a recipe. When used in a recipe it adds NO FLAVOR so no one would even know it was in there.

              FOR HEARTBURN/INDIGESTION

Take 1 teaspoon of chia seeds and swallow with a SIP of water. Wait 5-10 minutes then drink 8 ounces of water. The chia seeds should absorb some of the acid in your stomach. Just MAKE SURE you drink water afterwards since the chia seeds will soak up all the acid in your tummy and you don't want that.

              FOR APPETITE SUPPRESSION

Mix 2 teaspoons of chia seeds into a big glass of water and drink! The chia seeds will soak up the water and make you feel full.

I tried Primal Krista's Primal Pudding recipe and it didn't work for me. I think the coconut milk needs to be warmed up first to *activate* the chia seeds. Oh it tastes like HEAVEN... but the seeds only soaked up half the liquid and they didn't gel up well. It's still kinda *crunchy*. I think I might warm it up in the microwave a minute and let it sit on the counter to see if it will turn more jelly.

              ENGLISH MUFFINS

              Dry Mix:

              1/2 c golden flax meal
              1/4 c almond flour
1 scoop unflavored whey protein (or egg protein)
              1 tsp baking powder
              2 Tbs Parmesan

              Wet Mix:

2 jumbo eggs or 1/2 cup Eggbeaters
              dollop chia gel (3-4 Tbs)
              1/2 cup light mozzarella shreds
coconut milk as needed to make dough workable

Mix wet into dry, let sit for 5 minutes. Fill a 6 space greased muffin TOP pan and bake 12-14 min at 350.

              CHIA JAM

About 2 cups fresh or frozen strawberries, room temperature
              1T chia seeds

Mash or blend the strawberries into a puree. Hand mix in the chia seeds. Let sit for 15-20 minutes then check. If it isn't thick enough add a bit more chia seeds and let sit another 10 minutes. You want a thick, gel like consistency. Store in the fridge.

Love the primal pudding - I've been making a pumpkin pie version for a while by adding a few spices - cloves, cinnamon and nutmeg, and even a tbsp of pureed pumpkin. A few drops of vanilla stevia sweeten it perfectly. Yesterday, I added a handful of pork rinds to it and it was like pumpkin pie bread pudding. YUM!!

I also use these little suckers in just about everything lately - meatloaf, tuna patties, anything into which I can toss them - and I'm having a hard time finding many things in which they don't work! My latest favorite thing. Very fun to play with, too.

DeilaMiah - I'll try adding warm coconut milk next time. Thanks for the idea! Though, I have modified the recipe time to longer to allow the chia seeds to absorb the milk (you're right). If they set overnight they are so much more creamy.

Thanks for the feedback GoJenGo! I like the fall spices idea!

Mind if I add these variations (referencing you both of course) to the recipe page?
