Maybe try mixing coconut flour and almond flour (not meal--flour)? I am not much of a baker, but I bet someone who knows better will be here to give you some ideas by the end of the day. Or, by Thanksgiving at least...
Most people order almond flour in 5 to 25 lb bags from Amazon.com, due to its non-mealy texture and is more like regular flour. Personally, I like "bricks" so a dense biscuit/muffin/bread is okay with me. Try the almond flour, I have friends who rave about its superiority to almond meal flour.
