  • Why won't my coconut milke separate?

    I tried the recipe on here for coconut "whipped cream" the other day and it was great. I put the can in the fridge over night, scooped off the solid cream and left the water. Two cans in a row now won't separate... I did shake the first can by mistake (I'm not used to wanting it to separate ). The second can was right from the store into the fridge and no separation. Any ideas?

    Check the ingredients to see if they use different emulsifiers.

      Let it sit unrefrigerated for some time before you cool it. If it gets cold while mixed it won't separate out.
      Wheat is the new tobacco. Spread the word.

        If it has guar/xanthan gum in it, it won't separate

          Thai Kitchen has these ingredients and has absolutely no trouble separating!

            That is what I have been using. The first can was probably in my pantry for months - separated perfectly. The last 2 cans from the store (recently purchased) won't separate

            I've just been freezing it in single servings for when I make curry but I want my coconut cream again

              are you sure you are getting the full fat kind? i don't think the lite version separates.

                Yep. Full fat kind. At least now I have a pumpkin pie recipe for all the cans of coconut milk I'm opening
