Made these last night and they turned fabulously.
2 cups unsweetened shredded coconut
1 cup almond flour
1 stick (1/2 cup) butter
2 whole eggs
1 TBS vanilla
4 TBS of Ideal (xylitol sweetener)
Mix it all together very well. Softening the butter first helps a great deal with this. Place little balls on a cookie sheet and bake at 400 F for 12-14 minutes.
I melted some bittersweet chocolate with a little extra heavy cream blended in and placed a dollop on top of each macaroon after they came out of the oven.
Wanted to eat all of them.
