  • Avocado Lime Pie

    So, I enjoy browsing recipe sites for ideas. I was looking for ways to incorporate more avocados and came across this recipe for Avocado Lime Pie.

    Obviously not primal as written, but with just a few modifications - coconut milk instead of sweetened condensed milk, real cream instead of Cool Whip, and either no crust or a crust made from nuts - it looks like a winner!

    1 large ripe avocado
    1/3 cup lemon juice (or lime juice)
    1 can sweetened condensed milk
    whipping cream or Cool Whip (to garnish)
    1 prepared graham cracker pie crust

    Directions:

    Combine first 3 ingredients in blender.
    Blend until completely smooth.
    Pour into piecrust.
    Refrigerate at least 2 hours.
    Top with whipping cream before serving.

    That sounds REALLY good with Primal ingredients! I have to make this soon!

      I keep wondering what to do with avocados other than slice into salad or puree in quacamole, so I think I will try that. I think gelatin might be needed to set it without the sweetened condensed milk.

          I was wondering about that, too. I don't have any avocados on hand (gasp!) but we should all try this and report back with results. I don't think coconut milk will cook at all the same way as sweetened condensed milk, besides the lack of sugar, but there's bound to be a way. Coconut cream, for starters, and gelatin is a good thought too. And I think it will be important to get really good limes.

            coconut milk will work if used in conjuction with gelatin. I've made key lime pie filling before that way.

              I don't have limes, but I have a lot of leftover lemon water ( I used a lot of lemons up, and threw in the leftovers in a jar with water to make a smoothie out of it), so I am going to try with a couple of small avocados, gelatine, coconut milk and stevia. Lime would be better, I agree.

                  Meh, too bland. Added a couple tbsp of chocolate, vanilla, cinnamon and chipotle. Still not a fan. It sets just fine though with gelatine. For the amount of carbs, I'd rather eat an apple.

                    I would probably just use organic sweetened condensed milk with no other sweeteners and call it a day :P

                      you could also make your own sweetened condensed milk using stevia. It's not that hard (I'll be having a tutorial on my food blog in the future)
