  • Frozen Ground Beef... what to do?

    Today is going absolutely horrible. I'm sure there are a ton of recipes here on the boards but all the letters keep swimming around and I find myself reading about tortillas instead of dinner.

    Any suggestions on what to do with ground beef? I just did toss herbs and tomato sauce in with it 2 days ago and it took 2 days to eat it all up and I just don't know what else to do right now. Maybe hamburgers? how?

    Please help the lady desperate crawling away from an anxiety attack (and trying to leave it in a deep hole far far away).

    UPDATE: UPDATE:
    I think I'll just IF the rest of the day as crawling away has not worked. Ths is my first full blown attack since starting the primal life a few weeks ago and I am terribly not prepared to handle both it and primal. I guess all those benefits to thie WoE haven't kicked in yet. I'm not sure I'd trust myself cooking on the stove now unless someone has some microwave trick.

    Meatballs. Add some finely chopped onion and a dash or two of red wine to the pan. Cook slowly. Relax.

      I can eat my weight in ground beef with onions, mushrooms and maybe some zucchini. Just start the beef in a skillet, and when it's about half done, start adding the onions first, then the mushrooms and then the zucchini. That is one of my favorite simple meals.

        If you don't know that one by now, you fail at primal. Hand in your paleo patches, and report for summary cannibalization.

          Thanks for those with helpful suggestions.

            i love ground beef, especially grass fed .. i always grill out burgers .. about 1/3lb each ... bring those to work for lunch .. easy to dress up somewhat, and add a veggie side and im in business .. ate one today!

                When I think ground beef, I immediately think chili. It's basically infinitely flexible and can be made in huge quantities if necessary. I love spicy food so this is where I always end up with ground beef. Also pretty damn simple to cook, one-pot meal.

                  I cook for 8 plus my husband takes a second serving to work. To trim down on time I've adapted some recipes because honestly, cooking meatballs or stuffed peppers or whatever for 9 people is just too much. Here are some of my ideas for ground beef....

                  Cook ground beef in skillet (even if it's frozen just hack off a chunk the size you want) cook until done, add some cheese if you like it, we have a smoked raw cheddar we like....slice some onions and tomatoes and scatter on top. This is like a hamburger but much lazier

                  again, hack off a chunk and fry in skillet, add nutmeg, pepper, cook until done and add some almond flour to thicken and heavy cream - tastes like Swedish meatballs but a heck of a lot less work.

                  add cabbage while cooking and onions, throw in some herbs from the garden - don't know what you'd call it but my family likes it.

                    If you are craving tortillas Paloe cabbage rolls are super-yummy. It ingeniously uses chopped boiled eggs instead of grain that is used in the classic cabbage rolls, and it can be steamed, slow cooked, baked in a pan or fried after you rolled 'em up. If rolling is not your thing, lazy cabbage rolls use all the same ingredients, but are braised wiuth chopped cabbage, instead of steaming cabbage leaves.

                      Tonight I made something yummy - I browned the grouned beef and added some salsa and taco seasoning. Then in a buttered caserole dish, I dumped a bag of shreded cabbage and half a bag of broccoli slaw. Then poured in some Trader Joe's enchilada sauce. Then dumped the taco meat on. I backed it for about a half hour at 350, then added some grated cheese on top and baked for another half hour.

                      It was super yummy, fall comfort food! I topped it with some shredded lettuce and tomatoe and extra salsa and ranch when I ate it.

                        Primal/Paleo Ground Beef Recipes

                        tomato meat sauce with spaghetti squash
                        shepard's (cottage) pie
                        stroganoff with cauliflower instead of noodles
                        extra sloppy joes (no bun, use a from-scratch recipe rather than manwitch)
                        no-bean chili
                        stuffed cabbage with cauliflower rice
                        stuffed peppers
                        stuffed zuchini
                        kebabs (can be spiced with garam masala for indian flavor or cumin, garlic and paprika for middle eastern)
                        Meatloaf bound with purred veggies and egg
                        Salisbury steak
                        meatza
                        taco salad/taco bowl (I don't like lettuce much, so I layer taco meat with salsa, sour cream and guac and a little cheddar on top to make a 5 layer dip without the beans or tortilla chips. a spoon is a much more efficient way to get it to your mouth)
                        simple saute and crumble with veggies on hand and spices and sauces to taste (perfect for the last bits of things hanging out in the fridge.)
                        Taco soup
                        What a friend of mine calls ghetto goulash (made with ground beef)
                        ALL KINDS of burgers. check out the website for the counter or another build-your-own burger restaurant for inspiration. if you've never tried a burger with a fried egg or with a slice of grilled pineapple drizzled with soy or teriyaki sauce, you can't say you're bored.

                        and then there are hundreds of things you can do with meatballs
                        Note: recipes often call for breadcrumbs, I use sauteed minced veggies (mushrooms and onions work well once they give up some of their moisture) or almond meal and up the binding factor with some egg.

                        meatballs with tomato sauce and zuchini pasta
                        swedish meatballs (small ones in cream sauce with nutmeg)
                        "greek" meatballs with feta and chopped olives in them, dip in lemon aoli
                        if you're eating rice you can make porcupine meatballs
                        meatballs in soup (albondigas-mexican, wedding soup- italian, Avoglemono-greek, pho-vietnamese)
                        if you're like me and love to explore other cultures through food these may be a good jumping off point for more meatballs Meatball - Wikipedia, the free encyclopedia and A collection of meatball recipes from around the world (the latter has a recipe for liver and juniper meatballs I am not adventurous enough to try at the moment)

                        if you do primal baking (perhaps coconut flour biscuits) and eat dairy AND have made your own bbq sauce, you could try to convert this recipe which I loved when I was young and didn't know better. Barbecue Cups - Frugal, Cheap, Dinner Recipes

                        if you're not a big cook and need help with how to translate some of these recipes to primal, (or find them in the first place) let me know, I may be able to help.

                        I absolutely love meatloaves! The curry one from the free book is a winner! And the brazillian one from this site stuffed with eggs and ham is out of this world.

                        One great secret I learned from Cordaine's recipe book was to do stuffed everything like cabbage rolls, peppers or zuccinis or whatever with using boiled eggs instead of rice, YUM!!!!

                        If you soak your beans/do slow cooker real chili once in a while is a fine thing.

                        I love basic tomato sauce with mushrooms, peppers and carrots and basil, it goes well with any veg that replaces pasta

                        We love meat ratatoille, with grilled eggplants and zuccinis

                        Stir-fried with snow peas and musrooms goes great over shiritake noodles.

                        Breakfast Curry ( just finished )
                        coconut oil/ beef tallow 1T of each
                        whole cumin, mustard, coriander, red pepper flake ( say 1/4 T of each, i cook be intuition and feel after 35 years <shrug>)
                        Sea Salt
                        12 oz ground beef
                        1T Curry Powder
                        1t Tumeric Extract ( yeah you probably dont have this, i got it from my naturopath for medicinal use but damn it packs a punch, else double the curry powder )
                        1/2 cup Bone Broth ( you have some simmering in the Crock pot right this moment dont you ???? LOL )
                        1/2 can coconut milk
                        1/3 cup coconut

                        items listed in the order they were added and the ground beef was 90% browned before i added the Curry powder
                        the shredded coconut was a last 2 min of cooking item

                        We're a big fan of this:

                        You can change the tone of this dish by what spices you choose. Last time I made it, I added sweet curry spice. Delish.

                        My favorite is Curry Beef Lettuce Wraps.

                        I cook 1lb ground beef in a skillet, adding salt and curry powder to taste (I like a lot of curry). If it's super-lean I also add coconut oil to allow the meat to cook more evenly and quickly. Serve wrapped in lettuce with mango slices. Quick, simple, and super-tasty. Minimal clean up too!

                        One of my favorite stir-fry meals is a big cast iron skillet where I have sweat some onions in a little coconut oil, throw in a handful or more of cut okra, zucchini and or yellow squash, some shrooms, sliced radishes, 1-3 baby carrots that are sliced, cooked just till tender, then add a decent amount of pre-cooked ground meat, then a full bunch of Dino kale (stem vein removed, kale chopped) thrown on the top, with an occasional handful of little frozen peas ... turn the heat off and let it all set around and get happy. Finish it off with a little onion powder, a bit of sea salt and some coconut aminos. If I think about it, I'll throw a few olives into the mix too.
                        Wonderful as is, and even better the next day with eggs and some fresh arugula or spinach for breakfast.

                        Ground Beef & Cabbage «

                        Hamburger gravy (the ultimate comfort food!): saute chopped onion and mushrooms in fat of your choice, add ground beef, season to taste with salt & pepper. When it's almost done, add heavy cream-half a cup or so. Let simmer a few minutes, until thickened and serve over mashed cauliflower.

                        I could eat browned hamburger with onions, salt, pepper, garlic, cumin and a side of sweet potato every day. My favorite quick meal.

                        Also, picadillo is another hamburger dish I love.

                        I winged it on a cottage pie the other day. Carrots and onions, beef liver and ground beef, and cauliflower topping with an egg in it. This was the first thing I cooked in the dorm kitchen I share with 5 other ladies, and I was so nervous that someone was going to come home while I was handling this massive liver creature. Somehow I thought it would be like a steak... but it practically had appendages. It turned out delicious though.

                        I'm going to use the rest of the ground to make a meatza inside a portabello. If I ate just a meat pizza I think my roommates would freak out.
