what to sautee veggies in?

    I tend to fry with a little bit of olive oil and garlic, then once on the plate I squeeze lemon juice on the top, then grated parmesan (if you eat cheese), chopped parsley, and black pepper. Parmesan isn't cheap but if you get the good stuff and use a fine grater, it lasts for ages. I can eat a whole head of brocolli like this, it's very nice.
    I know you said you didn't like spicy food but do you like thai/coconuty flavours? I was in a rush tonight and shoved chopped veg into a pan with a bit of coconut oil and a tablespoon of red thai curry paste, then after a few minutes bunged in a tin a coconut milk and seasoning. I suppose it was more like a main meal/soup but it would go nice with meat on the side and it really wasn't that spicy, just very yummy and quick.

          Olive oil, lard, bacon fat, tallow, butter, ghee, coconut oil, and any fat I can save from cooking dead animals.

          Olive oil, lard, bacon fat, tallow and butter for everything American and European. Coconut oil for SE Asian or sweet sautees like apples. Ghee for everything Indian-inspired.

          I have also saved the fat from awesome pots of homemade there's-a-whole-chicken-in-it broth and used that in sauteed veg blends. Gotta' get me some duck fat - don't have much experience with it as we don't cook a lot of duck here and it sounds heavenly right about now.

          I read once that Knifegill even saves that thick layer of fat from beef heart and renders that out. I should try that soon - we go through a lot of beef heart here at the house and the fat could accumulate in the freezer for a while.

          Sauteing with broth?? I have never done that - I think I would miss the fat (have always loved my fat ).
