    Pizza peppers
    4 large banana sized yellow banana peppers split down the middle like a banana split

    Fill each half with pizza sausage.(about a pound) Put the eight halves on a foil lined cookie sheet. Bake 400 for half an hour or until meat is done and beginning to brown.

    While that is happening...dice several plum tomatoes and slice about half a quart of mushrooms, simmer in a small pot with basil, garlic, a touch of oregano, salt and pepper, till mushrooms are done.

    Take hot peppers out of the oven and put 2 or three on each plate. Sprinkle them with a little shredded mozz cheese then spoon some of the hot tomato stuff on them. Sprinkle with Parmesan cheese.

    Closest thing I can come up with for Paleo Pizza that is EASY and wonderful. My husband took all left overs to work today.

      I would switch out the mozzerella (too much lactose) for a more aged (lactose free or trace) cheese like sharp cheddar or swiss. But it sounds amazing for those who can eat nightshades! Or, heck, fine for anybody as an occasional treat.

          The other day for dinner I browned some grass-fed ground beef, stirred in some unfrozen spinach, tomato paste, chopped olives, dried basil, oregano, and garlic powder. Then I stuffed it into a portabello mushroom cap. Quick, easy, so freaking delicious and pizza-like. If I'd had cheese I probably would've added that as well.
