  • Crappy Pot Roast

    I tried the Italian Pot Roast from the PB Cookbook. It would of been perfect if I hadn't undercooked the meat. My great smelling roast had the consistency of rubber . Needless to say, there was a lot of leftover meat. I wasn't sure what to do with all the meat so this was my solution:
    Make Lasagna!
    I chopped up the meat in the food processor.
    Added 1 lb sausage.
    Mixed together cottage cheese and ricotta cheese.
    Sliced up 3 summer squash (I told my daughters they were pseudo-noodles ).
    I layered marinara sauce, squash, meat and cheese into a 9x18 pan and cooked if for an hour.
    Once out of the oven I topped it with mozzarella.
    It was delicious. Even the kids gulped it down.
    I am going to be trying more lasagna recipes in the near future!

      That does sound good. But if you undercooked the meat, couldn't you have just... cooked it some more? If you meant overcooked, that makes more sense.

        I guess I could have cooked it more. It was already a late dinner when I stopped and the Lasagna idea just sounded good. On a side note I did get heartburn from my Lasagna. Not sure if it was all the dairy or eating for lunch and dinner 2 days in a row.
