    I just typed this recipe up for a friend who really liked it, so I figured I'd post it as well here, maybe someone would enjoy it as well.

    Leida's Vinegret (Russian Beet Salad)

    The original Vinegret is made with boiled potatoes as well as beets, but I find that beet-only one is better, as beets do not absorb the dressing as voraciously as the potatoes do & have far more flavour.

    2 large or 3 medium beets, boiled & peeled
    1/2 cup of finely diced cucumber
    1/2 cup of finely diced tomato
    1/2 cup of sauerkraut
    1 boiled and finely chopped medium carrot or ~ 3-4 baby one, fresh & shredded
    2 tbsp of finally chopped red onion or a couple of green onions

    Optional: a couple of tbsp of canned drained peas and chopped pickles; chopped parsley or dill weed or a combination; roasted sunflower seeds; tender beets greens if you get them with the beets.

    Dressing: 3 tbsp of olive oil (or 2 tbsp oil + 1 tbsp water); 1/2 tbsp of balsamic vinegar (or to taste); 1 tbsp of coarse-grained mustard; 1 garlic clove squeezed; 1/2 tsp of sugar if using store-bought sauerkraut; freshly ground black pepper to taste (put it all in a small jar and shake well).

    Alternatively, Vinegret can be dressed with 2:1 mixture of mayo and sour cream diluted with water to a ranch dressing consistency.

    Combine chopped ingredients; pour the dressing over, mix well and leave in the fridge for a bit to let the veggies and the dressing to get to know each-other. Serve with chopped parsley/dill and roasted sunflower seeds, so the folks could mix that in if desired.

    May have to try. Not sure housemate would eat because of the beets. But she loves balsamic.
