  • french "toast" eggs and bacon

    i really like eggs but sometimes something on the sweet side sounds good for breakfast so i combined the two

    3 whole eggs beaten
    sprinkle of cinnamon
    splash of vanilla
    sweetener (i am still using up my agave...don't throw rocks at me LOL)

    sometimes i scramble it and sometimes i make it like a pan-quiche or crepe-y

    you can add and/or top with all kinds of stuff...HWC (in the "batter" or actually as a whipped topping), coconut milk, different sweet spices, fruit, almonds, use it as a wrap, etc

    I usually eat it with a bit of nut-butter and bacon

    Once I tried making eggplant french toast (google it, people do it). Anyway, it's harder than you'd think to get an eggplant slice to "soak" up the batter, so I had a bunch of the sweet cinnamony egg left at the end and cooked that up. Delicious.

    Aside-- if you kind of precook the eggplant and add batter as you keep flipping and poking, continue cooking for a pretty long time, it is pretty french toasty.

      what if you made primal pancakes (egg, primal approved flour, liquid, spices), let them sit out so they got crunchy, and the next morning tried french toasting them? Just a thought.

        i think i tried adding coconut flour once and since i don't remember it must not have turned out so great (but i am sure i didn't work real hard at it) LOL
        i have added cream cheese to both this concoction and "savory" eggs but i'm not doing very much dairy besides hwc, cheese at the moment

          I've made the eggplant french toast before. I liked it but the kiddos were not fans.

            try Oopsie Rolls/bread.....
            think I found them on the 'yourlighterside' blog. Sorry, no better link!

            3 eggs, seperated
            80grams cream cheese
            1/4 Teaspoon baking powder
            pinch salt
            (optional vanilla or cinnamon to taste)

            Pre heat oven to 150c
            Whip egg whites and backing powder until stiff
            Mix yolks and cream cheese until well combined
            Fold whites into yolks mix

            Spoon flat onto baking sheet
            Bake 30mins until golden brown.

            Cool before use.
            Batter can be used as pancake batter ( my kids love it).
            I have used as burger buns, for grilled cheese on 'toast'

            enjoy.

                          I use eggs, flaxmeal, and coconut milk most of the time when I make them for hubby & kid.

                          However, I recently tried protein pancakes, and I think it might be worth a try with this.
                          4 eggs, 2 scoops protein powder, baking powder
                          Blend well, cook like pancakes. Remove.
                          These are the world's driest pancakes, trust me, don't bother eating them at this point! lol
                          Proceed to treat the pancakes like dry bread & french toast them.
                          LMK how they turn out, ok?

                            I make the best french toast. Make tmanns rolls, fresh or left over can be used. Dip them in a beaten egg and fry in butter. Top as you like. I just add more butter to mine.
