I love Chicken and beef satay but decided to avoid the peanuts and go with Almond butter instead. It was Fantastic!

    Satay Dipping Sauce

    4 TBSP Almond Butter

    1 TBSP Sesame Butter (Tahini)

    1 TBSP Honey

    Juice from one Lime

    2 TSP fish sauce

    1 TSP Tamarind Paste

    8 ounces Coconut Milk

2 TBSP Smashed Almonds (Chopped will do)

Heat all the ingredients over medium low heat in a sauce pan until well blended. Dip your satay skewers in the sauce and enjoy!

Mmmmmm, that sounds delicious! I never thought of using almond butter. Must try. Where's the garlic?

OOOPS! Forgot the Garlic and the Hot Chili Peppers!!! DUH. Add enough of each to the recipe to spice it up. I have also squeezed a little lime in it to zing it up a bit but not needed. This is one of those...make it up and test recipes...

I love satay too, and I was thinking I could try subbing almond butter, too! Glad to hear it worked for you!!

A couple of years ago John Thorne wrote an incredible piece on satay in his food letter "Simple Cooking." Check it out if you have a chance.
