  • Banana Fritters trouble holding them together- Need them to flip

    Okay I make these about once a month when the banana's are really ripe and mushy. But I am having trouble getting them to "stay" together for the flip. Help? Suggestions

    1 ripe banana
    1 egg
    1/4 cup almond meal

    mash it all together then fry up in coconut oil

    when removed from cooking - let sit/drain on paper towel

    i would add a little coconut flour to soak up some moisture. -probably just a tablespoon or so. you could also try flax meal, again a tablespoon.
    either way, you'll want to let the mixture sit for a little to let the flour or meal work it's magic.
    sounds oh-so-tasty, jmday! i can't wait to try this myself!

        I had the same problem yesterday, and I remade it with another egg, and it helped.

          As I had some overripe bananas in my fruit bowl, I decided to steal your idea and make banana pancakes for breakfast

          Here's how I did it:

          1 banana
          2 eggs
          1 tbsp almond butter
          1 tbsp ground almonds
          1 tbsp flax meal

          Generously butter frying pan, divide mixture into three pancakes. Let cook until they slide in the pan without using a spatula, then flip and cook the other side.

          These turned out perfectly. Best ones I've ever made actually
