      This recipe has instructions for making it in a crockpot and alternate instructions for cooking faster if need be. It really is amazingly good.

          I have a different recipe for chicken with 40 cloves of garlic. And here it is.

          Heat oven to288 F (145C).

          Take a 1.5 kilo (3.5 lb) chicken.Season the inside with salt and pack in as many peeled cloves of garlic as possible - 35 / 40 with luck. Now take abut 2 oz butter and smear it over the garlic poking out of the chicken, pushing some into the cavity.

          Smear the chicken with about the same amount of butter again, place in roasting tin and roast for 3.5 / 4.5 hours, basting with the buttery juices occasionally.

          Take the chicken out of the oven, raise the heat to 200c and sprinkle sea salt over the chicken skin. Place back for about 10 - 20 minutes to brown off.

          Serve and add a spoonful of the by now gooey garlic to each plate. Yum!

                  ... even those with heavy cream. Don't worry about "dairy", just enjoy heavy cream. Classic French is superb! And, enjoy a glass of Bordeaux with your meals - a sensible indulgence as our friend Mark puts it. Best have a couple just to make sure you're having fun Food is more than fuel ... food feeds the soul.

                    Another thing I love about French food is that while it's not strictly primal, if you avoid all sugar, there are lots of 100% grain free desserts that you don't have to modify.

                      Interesting that what is known as the "French Paradox" is not really a paradox at all. They eat what is essentially Paleo/Primal much of the time - meat, veggies and oily sauces. Yes, I know they eat bread too but not like we do in the standard American diet.

                        Made it yesterday but only had about 25 cloves on hand, chucked 1/2 an onion and 1/2 a lemon in there too. What a stock today after the bones simmered 24 hours. I made a meal out of them, they just dissolve in your mouth.
                        Wheat is the new tobacco. Spread the word.
